What Should I Eat Every Day?

One of the primary reasons I chose to study nutrition is because I love food. In general, I eat a Mediterranean diet because I believe the research is strongest on the health benefits. This is what a typical weekday diet pattern would like for me:
Breakfast: Plain black tea and coffee with skim milk while I get my daughter ready for school and check e-mails.
Mid-morning: A banana with peanut butter, a scrambled egg and whole wheat toast, or a bowl of oatmeal.
Noon: A handful of nuts or trail mix, which I keep in my desk.
Mid-afternoon/ lunch: When I have time to walk to the hospital cafeteria, I’ll have a big salad with greens, other assorted veggies, and beans for protein and fiber. When I don’t have time, I’ll eat peanut butter and jelly on whole wheat bread and a piece of fruit at my desk. Water throughout the day and more coffee, as needed.
Dinner: Usually, the protein is chicken, fish, or tofu. The starch is brown rice, whole wheat pasta, or a starchy vegetable like corn or sweet potatoes. For a green vegetable, my daughter likes broccoli or green beans, so we often rotate between those two and whatever else is in season.
Later evening: we might have some more fruit and something sweet, like a cookie, a piece of chocolate, or a popsicle while we unwind from our day.
